Recipe - Yee Main (Noodles And Gravy)

For the cottage cheese:
12 ounce Cottage cheese
1/3 cup Niter kebbeh
2 Cloves garlic slightly
Crushed
One fourth teaspoon Ground cardamom
One half teaspoon Salt
One fourth teaspoon Pepper
For the greens:
2 pound Collards chopped
2 tablespoon Red chile finely chopped
1 tablespoon Fresh ginger grated
1 teaspoon Garlic finely chopped
One half teaspoon Ground cardamom
One fourth cup Niter kebbeh
2 tablespoon Onion finely chopped
Mix the first group of ingredients and let stand at room temp. for 15 min.
Remove the garlic cloves. Steam collards in a few Tbs of water for 20 min.
Add the rest of the second group and mix well. Spoon greens over cottage
cheese.
