Recipe - Spinach Waterenda

2 Boxes frozen chopped
spinach; drained
2 cup Bread crumbs
6 Shallots; cut or sliced up
6 Eggs; beaten
Three fourths cup Melted butter
One half cup Shredded cheese
1 teaspoon Minced garlic
One half teaspoon Thyme
One half teaspoon Cayenne pepper
Salt to taste
12 sl Tomato; thick
Mix all ingredients in order listed except tomatoes. Take an ice cream
scoop filled with mix & put on top of each tomato slice. Place on greased
cookie sheet & bake for 20 minutes at 350. Makes 12 servings.
