Recipe - Candied Yams-Citrus And Spice

2 cup Sugar
Three fourths cup Water
3 tablespoon Butter or margarine
One half teaspoon Grated orange rind
One half teaspoon Grated lemon rind
3 Sticks cinnamon
One fourth teaspoon Nutmeg
6 md Louisiana yams; fresh or
canned, cooked, peeled &
halved
6 Lemon slices
1 small Apple; cored & cut or sliced up
Combine sugar, water, butter or margarine, rinds, cinnamon and nutmeg. Heat
to boiling point over medium heat; cook 5 minutes. Meanwhile, arrange yams,
lemon slices and apple in a 1 1/2quart casserole. Pour syrup mixture over
other ingredients. Bake in moderate oven (350 degrees) for 30 minutes,
basting occasionally with syrup.
